Amaretto Cheesecake

1/4 cup + 2 tablespoons butter, melted

3 (8 ounce) packages cream cheese, softened

1 cup sugar

4 eggs

bullet

1/3 cup amaretto

bullet

1 (8 ounce) carton sour cream

1 tablespoon + 1 teaspoon sugar

1 tablespoon amaretto

bullet

sliced almonds

bullet

chocolate candy bar, shaved

Combine graham cracker crumbs, 2 tablespoons sugar, cinnamon, and butter; mix well. Firmly press mixture into bottom and 1/2 inch up sides of a 9" springform pan.

Beat cream cheese with electric mixer until light and fluffy. Gradually add 1 cup sugar, mixing well. Add eggs, one at a time, beating well after each addition. Stir in 1/3 cup amaretto; pour into prepared pan. Bake 375 for 45-50 minutes or until set.

Combine sour cream, 1 tablespoon + 1 teaspoon sugar, and 1 tablespoon amaretto. Stir well and spoon over cheesecake. Bake at 500 for 5 minutes. Let cool to room temperature; then refrigerate 24-48 hours. (It is best when thoroughly chilled and flavors have time to ripen.) Garnish with almonds and shaved chocolate.

NOTE: I used light cream cheese, light sour cream, and one bar of Hershey's chocolate candy. I used my potato peeler to shave the chocolate and make the curls. Just be sure and do it carefully, as the candy breaks easily.
