Apricot Chicken

4 skinless, boneless chicken breasts

¼ teaspoon salt

1 (16 ounce) can apricot halves, undrained

½ cup orange juice

bullet

2 tablespoons soy sauce

bullet

1 garlic clove, minced

bullet

1-teaspoon sesame oil

bullet

¾ cup flour

bullet

¼-1/2 teaspoon ground red pepper

1-tablespoon olive oil

bullet

6 green onions, thinly sliced

¼ cup chopped fresh cilantro

Drain apricots, reserving liquid. Coarsely chop apricots

Stir together reserved liquid, apricots, orange juice, soy sauce, garlic, and sesame oil.

Sprinkle chicken with salt and pepper (I used season salt and garlic powder instead.) Dredge in flour (I sprinkled with flour I keep in a small covered sifter).

Cook chicken in large skillet over medium heat for 3 minutes per side. Stir in apricot mixture and cook for 5 minutes. Add onions, and cook one minute. Sprinkle with cilantro.

NOTE: This was in the Living Light section of a Southern Living from early 2002. We really liked the flavor of the sauce with this chicken. I buy Tyson individually frozen breasts, so I did not flatten them, as called for in the recipe, as they were not too thick. And they cooked perfectly in the amount of time indicated. I served this with potatoes and yellow squash. Any kind of salad would also go well with this meal!
