Apricot-Glazed Carrots
Cook baby carrots and 1-teaspoon salt in boiling water for 15 minutes. Drain and set aside. Melt butter in saucepan; stir in preserves until blended. Stir in remaining ¼ teaspoon salt, nutmeg, orange rind, and orange juice; cook for 5 minutes. Add carrots and gently toss to coat. NOTE: Found this in October Southern Living 2001. It said it was from the 1998 Recipe Hall of Fame. I used Smuckers Apricot Preserves made with nurtisweet and with no sugar or fat. |
