Apricot Cookie Bars

bullet½ cup butter, softened
bullet2 cups firmly packed brown sugar
bullet2 eggs
bullet1 teaspoon vanilla
bullet1 ¾ cup sifted flour
bullet2 teaspoons baking powder
bullet½ teaspoon salt
bullet½ cup broken pecans
bullet½ cup dried apricots, chopped fine

Cream the butter and sugar. Add remaining ingredients in order listed, mixing well after each addition.

Spread in greased 13 x 9 aluminum pan. Bake for 30 minutes at 350. Cool and cut into bars.  Don't over bake, you want them a little sad (soggy) since they firm up as they cool.

NOTE: I got this recipe from my mother-in-law. She used to fix it for my husband when he was a child and it is still one of his favorites. She used to fix it in a glass pan but I had better luck in the aluminum one.  These things are absolutely addictive...A++++ while warm, but excellent any temperature.
