Artichoke Spinach Bake

bullet4 ounces artichokes, drained and chopped
bullet1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
bullet4 ounces light cream cheese
bullet½ stick butter
bullet4 slices bacon, diced, cooked, and drained
bullet1 cup cheddar cheese, grated
bulletAlmonds or pecans

Place spinach and cut artichokes into mixing bowl. Melt butter and cream cheese in small bowl in microwave. Stir cream cheese mixture into vegetables and put into small casserole dish. Sprinkle bacon on top of mixture and cover with cheese. Top with nuts, if desired. Bake 350 for 30 minutes.

NOTE: This is in the Tampa Treasures Cookbook I borrowed from a friend. It is half the given recipe and was just right for the two of us. It did call for Parmesan cheese rather than cheddar, but I prefer cheddar so I changed it. I did put almonds on top before I baked it. I served it with Pork Chops with Rosemary Vinegar Sauce and a pear, mayonnaise, and cheddar cheese salad.
