Asiago Potatoes

bullet10 small to medium red creamer potatoes
bullet1 cup asiago cheese, grated
bulletSome chopped chives
bullet2 cloves minced garlic
bullet¼ cup mayonnaise
bullet½ tablespoon fresh thyme
bullet½ tablespoon fresh oregano
bulletPaprika for color

 

Steam new potatoes about 20 minutes; then cool them thoroughly.

Scoop out a portion of the potato and save it for another use or discard it. Mix garlic and chives with the asiago cheese. Add the oregano and thyme. Use mayonnaise to bind the mixture together. Stuff the mixture into the hollowed out portion of the potatoes.

Place potatoes in a shallow dish, sprinkle with paprika, and bake at 350 about ½ hour.

NOTE: This is one of our favorite potato recipes. I use the small red creamer potatoes and scoop them out with a caper spoon I have which I got at Crate and Barrel. Then, if the potato is a bit larger, I take out a bit more. A melon scoop would work just as well. I have done it with both dried and fresh herbs, but I prefer the fresh. I also use light Miracle Whip rather than mayo. The proportions above are for fresh, so if you use dried, use one-third of the amount given. This is half the recipe that was given for me but this is plenty for two.
