Asparagus Nut Stir-Fry

1 ½ pounds fresh asparagus

2 tablespoons olive oil

¼ cup thinly sliced red pepper

¼ cup coarsely chopped walnuts

bullet

¼ teaspoon ground ginger OR 1 teaspoon minced fresh gingerroot

1 clove garlic, minced

bullet

1/8 teaspoon crushed red pepper

2 tablespoons chicken broth

bullet

2 tablespoons soy sauce

bullet

½ teaspoon splenda (or sugar)

½ teaspoon salt

In a skillet or wok, stir-fry asparagus in olive until crisp-tender, about 10 minutes. Remove and keep warm. In the same skillet, stir-fry the red pepper, walnuts, ginger, garlic, and pepper flakes for about a minute. Stir in the broth, soy sauce, and seasonings. Heat thru, add the asparagus and stir to coat.

Note: This was in Feb/March 2001 Taste of Home. It gave no nutritional analysis, but everything in it is ok on the low carb diet, especially since I changed the sugar to splenda. It was quick to fix and had a good flavor!
