Asparagus Salad

1 lb. fresh asparagus

2 tablespoons olive oil

1 tablespoon balsamic vinegar

bullet

½ tablespoon lemon juice

bullet

1 teaspoon chopped fresh chives

bullet

½ teaspoon Dijon mustard

bullet

1/8 teaspoon salt

bullet

1/8 teaspoon pepper

½ chopped shallot (optional)

bullet

1 hard cooked egg, chopped (optional)

 

Snap off tough ends of asparagus. Cook in boiling salted water until crisp-tender (cook to your preference, crunchy or soft!). Plunge asparagus into ice water to stop cooking process. Drain and set aside.

Whisk together olive oil with next six ingredients and, if desired, shallot.

Drizzle asparagus with vinaigrette, and sprinkle with chopped egg, if desired.

 

NOTE: Found this in August 2001 Southern Living. It is for half the given recipe and fed us comfortably. I chose to use the shallot but did not use the hard boiled egg. I think it would be very pretty with the egg, tho.
