BBQ Chicken Sandwich with Pineapple

bullet1 Onion Schnecken roll per person (or roll of choice)
bulletLouis Rich Prepared Chicken, original seasoning
bulletBBQ sauce of choice
bulletPineapple Tidbits, drained
bulletLettuce and Tomato
bulletSpicy Mustard

Cut the rolls in half, butter them, and brown them under the broiler.

Spread rolls with spicy mustard. Layer lettuce, tomato, BBQ chicken and top with pineapple tidbits.

NOTE: We ate at The Firehouse Restaurant in Johnson City, TN and the server recommended we get this particular sandwich. It was awhile ago and I cannot remember if the sandwich also had bacon on it or not, but it was excellent! They served it on a HUGE roll with a chicken breast and a couple of slices of pineapple. I prefer just getting a smaller roll ( I get them at Publix), toasting it, using the spicy mustard that is elsewhere on the site, and heating the chicken strips in Bulls Eye BBQ sauce in the microwave. I served it with the Fire and Ice Pickles elsewhere on this site and either chips of some sort or the baked bean recipe, also elsewhere on this site.
