Bacardi Rum Glazed Cake

½ cup chopped pecans or walnuts

1 (18.25 ounce) Duncan Hines Moist Yellow Cake Mix

3 eggs

1/3-cup vegetable oil

bullet

1-cup water

Grease and flour bundt or tube pan. Put nuts (I used pecans) into bottom of pan. Preheat oven to 350.

Mix batter on high speed for 2 minutes, and then pour over nuts in prepared pan.

Bake 350 for 45 minutes or more. Do not underbake. (Mine was done in 45 minutes).

Glaze:

1 stick butter

½ cup Bacardi Rum

1-cup sugar

Melt butter. Stir in rum and sugar. Boil 5 minutes stirring constantly. Remove from heat and stir hot glaze over hot cake while in pan. Let cake sit for 20 minutes, then invert onto plate.

NOTE: I got this recipe years ago from a friend in Eustis. The recipe at that time called for yellow cake with pudding in the mix, but apparently they don’t make those anymore, so I just used Duncan Hines Moist Cake Mix. I also didn’t have any rum, so I went to the liquor store and bought two of the miniatures. It was just a little less than ½ cup, but its what I used. I had some yellow rum, but not knowing whether or not to use it, I chose to follow the recipe and get Bacardi—as I don’t know that much about rum! J While the glaze boiled, I stirred it with my rubber based whisk so I didn’t have to worry about scratching my calphalon!
