Bacon-Mandarin Salad

¼ cup olive oil

2 tablespoons red wine vinegar

2 tablespoons sugar

bullet

½ tablespoon chopped fresh basil

Dash Tabasco

bullet

1 (8 ounce) can mandarin oranges, drained and chilled

4 slices bacon, cooked and crumbled

bullet

2 tablespoons sliced almonds, toasted

 

Whisk together first five ingredients in bowl, blending well.

Toss lettuce and oranges with dressing. Sprinkle with crumbled bacon and sliced almonds. Serve immediately.

NOTE: This is in the April 2002 Southern Living. It is for half the given recipe. I used a half a bag of Romaine for the two of us and the dressing proportions I fixed were more than enough. I wasn’t sure how we’d like the mandarin oranges, but together with the bacon and almonds we loved it! The recipe said you can also substitute fresh orange slices, but these were just so easy! If I were making it for four, I’d get the 15-ounce can of the oranges and probably use six slices of bacon. I fixed this with stuffed baked potatoes for lunch and it was wonderful! I also take my bacon and slice it cross wise and then cook it that way, so I don’t have to crumble it later. Less mess! J
