Baked Linguine With Meat Sauce

1 pound lean ground meat

1 clove garlic, minced

bullet

1 (15 ounce) can crushed tomatoes

˝ (8 ounce) can tomato sauce

bullet

˝ (6 ounce) can tomato paste

bullet

˝ teaspoon salt

bullet

1 teaspoon sugar

bullet

˝ teaspoon Italian seasoning (optional)

bullet

4 ounces cooked linguine

bullet

1 (8 ounce) container sour cream

bullet

˝ (8 ounce) package cream cheese, softened

bullet

˝ bunch scallions

bullet

1 cup sharp cheddar cheese

 

 

Cook beef and garlic in skillet, stirring until no longer pink; drain and return to skillet. Stir in tomatoes and next five ingredients. Simmer 30 minutes. Set aside.

 

Cook pasta according to package directions; drain. Place pasta in 8 x 8 casserole.

 

Stir together sour cream, cream cheese, and scallions. Spread over pasta. Top with meat sauce.

 

Bake at 350 for 25 minutes. Sprinkle with cheddar and bake 5 more minutes. Let stand 5 minutes before serving.

 

 

NOTE: I found this in February 2001 Southern Living. I cut the recipe in half for the two of us and we’ll get at least two meals out of it. It had a great flavor, very different from what I expected. The recipe did not call for the Italian seasoning, I just sprinkled it all over the skillet until it satisfied me! I also used light sour cream and light cream cheese and extra sharp cheddar. I had some thin spaghetti here so I just used that instead of linguine. Michael deemed it a "keeper" for us, so I’m sharing………………
