Baked Snook

¼ cup mayonnaise

¼ cup sour cream

1 package (dry) Original Ranch Dressing

½ pound snook (or any white fish)

bullet

1 can French fried onion rings

 

Combine mayonnaise, sour cream, and dry ranch dressing. Mix thoroughly. Coat fish with mixture and place in foil lined pan (for easy clean up). Crush French fried onion rings (with hands) over the fish until they are covered.

Bake 350 for ½ hour or until done.

NOTE: I got this years and years ago from a dear friend in Orlando. She and her husband cook snook this way, but I have also done halibut, sea bass, orange roughy, and grouper. Her recipe called for 1 cup of mayonnaise (I use light miracle whip) and 1 cup of sour cream along with 1 package of the ranch dressing. That is way too much for us to use, so I cut down the proportions, leaving the ranch dressing the same. It is one of our favorite ways to eat fish and is so moist and good!
