Baked Apple Pancake

1-cup pancake mix

2/3-cup milk

bullet

2 tablespoons vegetable oil

1 egg, beaten

bullet

¼ cup butter or margarine

bullet

1/3 cup packed brown sugar

bullet

1 medium Golden Delicious apple, peeled and sliced

Maple syrup

 

In a bowl, combine pancake mix (I used Bisquik), milk, oil, and egg.

In an 8" ovenproof skillet, melt butter. Stir in brown sugar and apple slices; sauté until sugar is dissolved. Pour batter over apple mixture. Cook, uncovered, over medium heat, until bubbles form on top of pancake.

Bake, uncovered, at 350 for 12-17 minutes (it is so big and puffy that I baked mine for 17 minutes and it was not too much) or until golden brown. Invert onto a serving platter. Serve with syrup. (Yields 1-2 servings).

NOTE: This was our Sunday night supper tonight along with bacon and orange juice. I found it in the January/February 2002 TASTE OF HOME magazine. It is a recipe from the Atrium Pancake restaurant in Gatlinburg, Tennessee. Keep in mind that is it baked, and it truly takes up the entire 8" skillet! It is big and puffy and absolutely wonderful! It was sweet enough for me without the syrup, but Michael put syrup on his. Either way, this is definitely a "keeper" for us! And half of it was plenty for each of us!
