Baked Parmesan Fish

1/3 cup grated Parmesan cheese

2 tablespoons all-purpose flour

½ teaspoon paprika

¼ teaspoon salt

bullet

1/8-teaspoon pepper

1 egg

bullet

2 tablespoons milk

bullet

4 orange roughy fillets (4 ounces each)

IN a shallow bowl, combine the cheese, flour, paprika, salt, and pepper. In another bowl, beat the egg and milk. Dip fish filets into egg mixture, then coat with the Parmesan mixture. Arrange in a greased casserole. Bake, uncovered, for 30 minutes at 350.

NOTE: I found this in Feb/March 2002 issue of Taste of Home. It gave the nutritional analysis with the recipe and it has 4 g of carbs per serving. I used already grated Parmesan, which I got in the deli section at Publix. And I used Sea Bass, since they had some fresh. I served it with asparagus nut stir-fry, a marinated tomato and caper salad, and yellow squash.
