Baked Spinach with Three Cheeses

1 cup finely chopped onion |

1/2 cup crumbled feta cheese |
|
1/2 cup grated edam cheese |
|
1/4 cup crumbled gorgonzola cheese |
|
2 tablespoons fresh dill |
|
2 tablespoons fresh breadcrumbs |
|
1 large egg yolk |
|
3 tablespoons olive oil |
|
2 (10 oz) packages fresh spinach, coarsely chopped |
Preheat oven to 350 and lightly butter an 11 x 7 casserole.
Mix first seven ingredients in large bowl and set aside.
Heat oil; add spinach and saute until wilted. Transfer to strainer and drain well.
Put spinach in bottom of casserole and top with cheese mixture. Bake about 20 minutes.
NOTE: Calls for then broiling until cheese is golden on top, but I don't do that.
