Baked Sweet Potatoes with Maple-Jalapeno Sour Cream

4 sweet potatoes, baked

1/3 cup sour cream or plain yogurt

1 T. pure maple syrup

bullet

2 t. jalapeno, seeded, minced

bullet

1 t. fresh lime juice

bullet

Salt and Tabasco to taste

Combine in a small bowl the last four ingredients. Refrigerate until cold.

Top sweet potatoes with mixture.

NOTE: I found this in Cuisine At Home, but I don’t know which month. It is online at www.CuisineAtHome.com . It says to serve the potatoes with the mixture and top with bacon bits and sliced scallions, which I forgot to do! But the topping is excellent! I’ve never fixed baked sweet potatoes with anything other than butter, but this will be what I use now. It has a wonderful flavor! I did bake my potatoes in the microwave. I also used reduced fat sour cream, pure maple syrup, bottled lime juice, and a few shakes of rock salt and Tabasco. It took one good sized jalapeno and I had a bit more than the two teaspoons required for the recipe.
