Banana Cream Pie

9" pie crust, baked and cooled

2 sliced bananas

1/4 cup soft beaten cream cheese

2/3 cup sugar

bullet

1/4 cup cornstarch

bullet

1/2 teaspoon salt

bullet

1 1/2 cups evaporated mile

1 1/2 cups whole milk

bullet

4 beaten egg yolks

bullet

2 tablespoons butter, softened

bullet

1 tablespoon vanilla

Mix in a 2 quart sauce pan sugar, cornstarch, salt, both milks. Cook over medium heat sitrring constantly until mixture thickens and boils for one minute. Remove from heat.

Slowly pour half the hot mixture into the eggs and stir until it is completely incorporated. Then pour the egg mixture into the pot with the other half of the pudding. Continue to cook on medium heat until it reaches boiling again.

Add Cream cheese and mix thoroughly (use a hand mixer--it will dissolve the cream cheese better and make the pudding lighter and creamier.)

Remove from heat and add butter and vanilla and blend with hand mixer.

Let pudding stand 15 minutes, but while still warm pour half into prepared crust. Top with sliced bananas and then pour over rest of pudding.

When pie is completely cooled top with fresh whipped cream and garnish with sliced almonds.

NOTE: I did not top with whipped cream. I used the egg whites, made a meringue, and browned it for 12 minutes on 350.
