Banana Pudding From Nabisco

1 Box of Nabisco Nilla Vanilla Wafers

5-6 medium bananas, sliced

¾ cup granulated sugar, divided

1/3 cup all purpose flour

bullet

Dash of salt

bullet

4 eggs, separated, at room temperature

bullet

2 cups milk

bullet

½ teaspoon vanilla extract

 

Combine ½ cup sugar, flour, and salt in glass bowl. Stir in 4 egg yolks and milk; blend well. Cook in microwave, in two-minute increments, stirring well after each 2 minutes, until thickened. Remove from heat and stir in vanilla.

In 2-quart Pyrex dish, cover bottom with vanilla wafers, top with bananas, and then pudding. Make another two layers, starting each layer with vanilla wafers, then bananas, then pudding.

Beat egg whites until stiff but not dry; gradually add remaining ¼ cup sugar and beat until stiff peaks form. Spoon on top of pudding, spreading to cover the entire surface. Bake at 350 for 10-12 minutes.

NOTE: This is my mother’s recipe and is on the box of Nilla Vanilla Wafers by Nabisco. I had cut it off and kept it, thankfully, as the last box I bought did NOT have the recipe on it. So I decided I needed to add it to my recipe list just in case I lost it! This is one of our favorite desserts. Sort of "comfort food" in our family! J The directions call for making the pudding with a double boiler, but I use the microwave instead.
