Banana-Bacon Grilled Sandwich

bullet1 banana per person, sliced lengthwise
bullet2 pieces of bread per person
bullet3 slices of bacon, sliced in half and cooked, per person

Cook and drain the bacon and set it aside. I always cut it in half before I cook it.

Put squeeze butter on each slice of bread and put them on a stove top griddle. When they are completely grilled and brown, put butter on the top side, turn it over, and grill it until it, too, is nicely browned.

To assemble the sandwiches, put the bacon cross-wise on the bread and top it with the bacon (which I put across the width). Top it with the second browned piece of bread and eat warm!

NOTE: This is a sandwich my husband grew up eating and is one of his all time favorite "comfort foods." Quite often we will have it for Sunday night dinner. My mother used to fix peanut butter and banana sandwiches, and I had never heard of this. I must admit, tho, that it is extremely good!
