Better than Sex Cake

1 box Yellow Cake Mix |

1 (20 ounce) can crushed pineapple |
|
¾ cup sugar |
|
2 (3.5 ounce) Jello Instant Vanilla Pudding Mix |
|
3 cups milk |
|
1 (8 ounce) carton cool whip |
|
¾ cup flaked coconut |
Bake cake according to box directions in a 9 x 13" pan.
While cake bakes, bring pineapple to a boil with the sugar, and cook over medium heat, stirring, until mixture is syrupy and thick, about 3 minutes.
When cake is done, remove from oven, poke holes in it with a fork, and pour pineapple mixture on top. Spread to cover entire cake.
Cool completely.
When cake is cool, mix milk and pudding mix and beat until thick. Spread over entire cake.
Mix cool whip with coconut and spread over entire cake. Refrigerate.
NOTE: I got this recipe from a good friend here in Ft. Myers. We had dinner at their house and this was our dessert. And we left with the recipe and she said I could share it via the web site. It is very moist and wonderful and can easily be made a day ahead!
