Bistro Chicken With Feta

1 cup cooked penne or rotini pasta, drained

½ cup quartered grape or cherry tomatoes

½ (4 ounce) package Athenos Crumbled Feta with Basil and Tomato

¼ cup honey mustard or Caesar salad dressing

bullet

3 large basil leaves, cut into strips

bullet

2 tablespoons scallions or red onion,chopped

bullet

2 tablespoons sun dried tomatoes in oil, drained, chopped

bullet

1 skinless boneless chicken breast, grilled, cut into ¼ " slices

 

 

Mix all ingredients in large bowl. Serve warm or chilled.

NOTE: I found this recipe on the back of a package of Athenos Crumbled Feta with Basil and Tomato. It was a recipe for four and I cut it in half (which is the above) for us. We will easily get two meals out of it. I buy skinless boneless chicken breasts at Sams (Tyson) and the breasts are huge, so I just used one of them. I seasoned it with seasoned salt and garlic powder and grilled it and used grape tomatoes. I chose to use the Caesar dressing in the Et Tu Caesar Salad box and then made us a small Caesar salad with the remaining dressing. I served it hot, as that is Michael’s preference. It would be excellent served cold!
