Blackberry Cobbler

4 cups fresh blackberries

1 Tablespoon lemon juice

1 large egg

1 cup EACH sugar and all-purpose flour

6 Tablespoons melted butter

Preheat oven to 375. Put blackberries in 8" lightly greased casserole dish. "Sprinkle lemon juice over berries."

In a medium bowl, beat up egg and add flour and sugar. Stir until crumbly, then put on top of berries. Pour melted butter over topping and bake 35-40 minutes. Wait 10 minutes, then serve with whipped cream or vanilla ice cream.

NOTE: I found this in the July 2008 Southern Living. Went straight to Sam's this morning and bought my blackberries. I’ve never fixed a topping like that and did end up stirring it with my hand and making it more crumbly than the fork was doing. It was SO easy and just SO good! I chose vanilla ice cream, as my husband loves that! ALSO: If you do not like berries with seeds, this is also excellent with blueberries!
