Blueberry Smoothie

2 cups blueberries, frozen

1 banana, cut up into chunks, frozen

1 cup plain low-fat yogurt

1 cup apple juice or cider

bullet

2 tablespoons chopped walnuts

1 teaspoon chopped fresh mint

Place yogurt, juice, walnuts, and mint in blender and turn on high. Add frozen fruit from the top and puree until completely blended and smooth.

NOTE: This is in the July 2004 issue of Bon Appetit. I used Publix Low-Fat Vanilla Yogurt and apple cider rather than apple juice. I also bought fresh mint and just threw several leaves into the blender. I keep chopped walnuts in my freezer for salads, so I just threw them in there, too. It was SO easy to do and is SO thick and creamy IF you freeze the fruit first. I did use fresh blueberries, as it is summer and they are plentiful and inexpensive.
