Blueberry Muffins

1 ½ cups all-purpose flour

½ cup sugar

2 teaspoons baking powder

½ teaspoon salt

1/3 cup milk

bullet

¼ cup vegetable oil

bullet

1 large egg

bullet

1-cup fresh or frozen blueberries

bullet

2 tablespoons sugar

Combine first four ingredients in a large bowl; make a well in the center.

Stir together milk, oil, and egg; add to dry ingredients, stirring just until moistened. Fold in blueberries.

Spoon into greased muffin pans, filling two-thirds full. Sprinkle batter evenly with 2 tablespoons sugar.

Bake at 400 for 20-25 minutes or until muffins are golden. Remove from pans immediately and cool on wire racks.

NOTE: I found this in Southern Living, probably June or July 2001. It did not say to sift the flour, but mother told me to always do it, so I did. I also FORGOT to sprinkle the sugar on top of them, but they were great without it. It does say it makes six muffins and I did use cupcake liners in a six muffin pan. However, it was MORE than that and I filled them to the top. Next time I’ll use a 12 cupcake pan and it will probably make 8 or 9. They were very, very good!!! And so very easy to make!
