Breakfast Quiche

2 (9") pie shells, thawed

8 strips bacon, cooked

1 large onion

1-tablespoon butter

bullet

2 cups Swiss cheese, cubed

1/3 cup cheddar, grated

bullet

4 eggs

bullet

2 cups cream

bullet

¼ teaspoon nutmeg

bullet

½ teaspoon salt

bullet

¼ teaspoon white pepper

 

Preheat oven to 450. Prick shells well and brown 3-5 minutes. Set aside.

Cook and crumble bacon. Sauté onions in one-tablespoon butter.

Line each crust with half the crumbled bacon, then the onions. Fill with Swiss, then cheddar cheese.

Beat eggs, cream, and seasonings. Pour into each quiche dish. Bake 15 minutes at 450, then reduce to 350 and bake 10-15 minutes, until golden brown.

NOTE: Got this recipe in the early 80s from someone I knew here. I have fixed it many times and it’s always a hit. I used to fix and freeze it when I knew company was coming and it was an easy thing to thaw and have for breakfast with fruit. Have also served it for lunch with a salad.
