Brined Pork Chops with Spicy Chutney BBQ Sauce

4 cups water

¼ cup coarse salt

¼ cup packed golden brown sugar

2 tablespoons chili powder

4 (1 ½" thick) bone-in pork rib chops

Combine 1-cup water, salt, sugar, and chili powder in large pot. Bring to a boil, stirring to dissolve salt and sugar. Remove from heat. Add 3 cups cold water. Cool brine completely. Add pork chops, pressing to submerge. Cover pot; chill at least six hours or overnight.

Drain pork shops and pat dry with paper towels.  Brush on both sides with oil and sprinkle with pepper.  Grill to desired doneness, about 10 minutes per side or until 150 degrees for medium.  Serve with Spicy Chutney BBQ Sauce.

Spicy Chutney BBQ Sauce

2 tablespoons butter

1 medium onion, finely chopped

2 garlic cloves, minced

1 (12 ounce) bottle chili sauce

1 (9-10 ounce) jar hot mango chutney

bullet

1/3-cup apple cider vinegar

bullet

2 tablespoons Worcestershire sauce

bullet

2 tablespoons Dijon mustard

bullet

1-½ teaspoons Tabasco

 

Melt butter in heavy saucepan. Add onion; sauté until golden, about 4 minutes. Add garlic and stir 1 minute. Stir in chili sauce, chutney, vinegar, Worcestershire sauce, and mustard; bring to a boil. Reduce heat to medium-low and simmer until reduced to 2 ¾ cups, stirring frequently, about 10 minutes. Stir in Tabasco. Transfer to a bowl and cool to room temperature, about 1 hour. (Can be made 3 days ahead. Cover and chill. Bring to room temperature before serving.)

NOTE: These recipes are in the August 2002 Bon Appetit. I made only half the brine recipe and used two butterflied pork chops. I also made it on Saturday afternoon and we had it on Monday for lunch. The BBQ recipe suggests habanero pepper sauce, but I just used Tabasco. I did use my Windsor pot to do the sauce since it had to be reduced, and after 10 minutes I had a little less than two cups of sauce. It has a wonderful flavor! And will go with so many different things! I served it with Balsamic Baby Carrots and a pear, mayo, and cheese salad. Had the blueberry sundae for dessert.
