Broccoli and Squash Casserole

1-pound fresh broccoli, cut into bite size pieces

1 pound yellow squash, sliced

1 small onion, chopped

bullet

2 tablespoons butter

bullet

1 large egg, lightly beaten

bullet

½ cup mayonnaise

bullet

2 cups shredded cheddar cheese

bullet

¼ teaspoon pepper

bullet

1-cup fine dry breadcrumbs

Arrange broccoli in a large steamer basket over boiling water. Cover and steam 5-8 minutes or until crisp-tender; remove from basket and set aside. Add squash and onion to basket and repeat procedure.

Combine squash, onion, and butter in a large bowl and mash. Stir in broccoli, eggs, and next three ingredients. Spoon into lightly greased baking dish. Sprinkle evenly with breadcrumbs.

Bake at 350 for 25 minutes or until golden.

NOTE: This was in the August 2001 Southern Living. It is exactly HALF the given recipe. We really did like the flavor, and everything in it EXCEPT the breadcrumbs goes with our current low-carb diet. So I did eliminate the breadcrumbs. I always use unsalted butter and light Miracle Whip. This made enough for two good meals for us. Served it with Chicken Piccata and pickled beets. Any kind of salad would be great with it.
