Broccoli with Mornay Sauce

1 bunch broccoli, cut up

½ cup finely chopped onion

2 tablespoons butter

3 tablespoons flour

2 cups milk

bullet

¼ cup grated Swiss cheese

bullet

½ teaspoon salt

bullet

1/8-teaspoon pepper

bullet

Dash nutmeg

bullet

¼ cup grated Parmesan cheese

bullet

¼ cup fine dry white breadcrumbs

bullet

2 tablespoons melted butter

Cook broccoli until almost tender (about 3-5 minutes). Refresh under cold water and drain well.

In medium saucepan sauté onion in butter for 3 minutes. Add flour, stirring constantly over low heat for one minute.

Add milk slowly, whisking constantly, until it thickens, about five minutes.

Stir in Swiss cheese and all seasonings.

Put some of the sauce in the bottom of the casserole dish. Arrange broccoli over sauce and pour remaining sauce over broccoli.

Combine Parmesan cheese and breadcrumbs and sprinkle over casserole.

Drizzle with melted butter and bake uncovered at 375 for 20-25 minutes.

NOTE: Got this recipe from Aysha when she was in college, so my guess is that it came from Bon Appetit or a friend. We enjoy it and I usually use cheddar cheese instead of Swiss when making it.
