Brownies with Peanut Butter Swirl

bullet2 ½ sticks unsalted butter, softened
bullet1 cup chunky peanut butter
bullet½ cup firmly packed light brown sugar
bullet3 large eggs
bullet8 ounces cream cheese, softened
bullet4 ounces unsweetened chocolate
bullet2 cups granulated sugar
bullet1 teaspoon vanilla
bullet1 cup flour minus 2 TBSP, sifted

In a bowl, cream together one-half stick of the butter, the peanut butter, and the brown sugar. Beat in one egg. Add the cream cheese, a little at a time, beating until the mixture is smooth.

In a small bowl, place one stick butter and the chocolate in microwave and melt. Stir together until well blended and set aside to cool.

In another bowl, cream together the remaining one stick of butter and the granulated sugar, beating until the mixture is light and fluffy. Beat in the remaining two eggs, one at a time, beating well after each addition. Stir in the chocolate mixture, the vanilla, and the flour. Pour the batter into a buttered 13 x 9 pan. Drop the peanut butter mixture onto the batter and swirl it all together.

Bake for 45 minutes (in a pre-heated 350 degree oven) or until they pull away slightly from the sides of the pan. Cool before cutting into squares.

NOTE: This was in the Ft. Myers News-Press on Feb. 15, 2006 in the "Tailgating" section. The recipe called for 7/8 cup of flour, so I just measured a cup and took out 2 TBSP. I also used Jiff Crunchy Peanut Butter, as that is our preference of peanut butter. I added the cream cheese in four additions. I did the initial mixture in my Kitchen Aide and the other mixture in my eight cup Tupperware measuring cup. It was no problem adding the flour and chocolate mixture in that size container.
