Bruschetta

1 loaf crusty French bread or a baguette, cut into ½" slices

3 tablespoons each, butter and olive oil

1 very large clove garlic, minced

bullet

3-4 medium tomatoes

Minced fresh basil

bullet

Balsamic vinegar to taste

Grated Mozzarella Cheese

 

Cut bread into slices, diagonally.

Put butter, olive oil, and minced garlic into dish and microwave about 1 minute.

Brush above mixture on BOTH sides of bread. Bake at 325 for 6 minutes on each side. Set-aside.

Cut tomatoes up, season with salt and pepper, and put into colander to drain. Mince basil and stir into tomatoes. Sprinkle liberally with balsamic vinegar and let drain at least ½ hour.

Preheat oven to 350. Top toasted slices with tomato mixture and cover with mozzarella cheese. Bake 8 minutes.

NOTE: This is a combination recipe I put together from several sent to me by friends and we really like it. I fix it with quite a few of the Italian dishes. Actually, it could make a meal by itself with just a salad to accompany it!
