Bourbon Sweet Potato Casserole

6 medium sweet potatoes (about 3 pounds)

½ cup firmly packed brown sugar

1/2-cup butter, melted

1/3 cup orange juice

bullet

¼ cup bourbon

bullet

½ teaspoon salt

bullet

½ teaspoon pumpkin pie spice

1-cup miniature marshmallows (optional)

Cook sweet potatoes in boiling water to cover, 30 minutes or until tender. Drain. Let cool to touch; peel and mash.

Combine mashed sweet potato, brown sugar, and next 5 ingredients in a large mixing bowl; beat at medium speed with an electric mixer until smooth. Spoon mixture into 1 ½ quart casserole dish.

Bake 350 for 25 minutes. Top with marshmallows, if desired, and bake another 5-10 minutes or until browned.

NOTE: I copied this from a cookbook many years ago and have no idea which one. I made the entire recipe and only baked half of it for us in a small pottery casserole dish I got at an art show. The rest I froze and we’ll eat at another time. I used some bourbon that has been in the pantry more years than I can remember. This does not have a strong bourbon flavor, but there is a hint of it, and the flavor is wonderful! We had it with pulled pork, but it would go great with anything!
