Buttermilk Pancakes with Caramelized Bananas

1 cup all purpose flour

½ tablespoon sugar

¾ teaspoon baking powder

¼ + 1/8 teaspoons salt

1 cup buttermilk

bullet

1 egg, beaten

bullet

2 tablespoons butter, melted

bullet

1 large banana, cut into thin slices

Whisk flour, sugar, baking powder, and salt in a large bowl to blend. Whisk buttermilk, eggs, and butter in medium bowl to blend. Gradually whisk buttermilk mixture into flour mixture just until blended (do not over mix; small lumps may remain.)

Heat griddle over medium heat and brush with oil or spray with Pam. Pour batter by ¼ cup full on griddle. Top each with 4 slides of banana. Cook until bottoms brown and bubbles form, 2-3 minutes. Turn pancakes and cook until bottom brown and banana slices caramelize, about 2 minutes. Serve with maple syrup and bacon or ham.

NOTE: This is in the August 2004 Bon Appetit and is from the Old Rittenhouse Inn in Bayfield. Bayfield is considered the gateway to the Apostle Islands National Lakeshore on Lake Superior in Wisconsin. This recipe is half of the given one and made 10 nice sized pancakes. The flavor of the cooked bananas was really good with them, but I’m sure any type of fruit would work just as well (like peaches, blueberries, etc.). If you double the recipe, the directions said to put the cooked pancakes in a 250 degree oven to keep warm until all are cooked.
