Buttermilk Pancakes

1 cup all purpose flour

1 teaspoon baking soda

bullet

1 tablespoon sugar

bullet

1/2 teaspoon salt

bullet

1 egg

bullet

1 cup plus 2 tablespoons buttermilk

bullet

1 tablespoon vegetable oil

Combine first four ingredients. Combine egg, buttermilk, and oil; slowly stir into dry ingredients.

For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle. Turn when tops are covered with bubbles and edges are browned. Yields around 12 pancakes.

NOTE: I found this in 1983 Southern Living annual recipes. I had a buttermilk pancake recipe from a Warning Blender Cookbook that was the best, but lost it!  I keep hunting a good one and have tried several. This is basic and its pretty good and an easy dinner if you've had a huge lunch! J
