Cajun-Style Blackened Redfish

 

bullet1 teaspoon salt
bullet1 teaspoon minced fresh thyme
bullet1/2 teaspoon dried oregano
bullet1/2 teaspoon cayenne pepper
bullet1/2 teaspoon sweet paprika
bullet1/2 teaspoon ground black pepper
bullet1/2 teaspoon fennel seeds, crushed
bullet4 (6 oz) filets
bullet2 tablespoons olive oil

Preheat oven to 400. Mix first 7 ingredients in small bowl.

Place filets on baking sheet and brush on both sides with one tablespoon oil. Sprinkle on top of each with seasonings.

Heat heavy large skillet (preferably cast iron) over high heat until very hot. Add remaining one tablespoon oil; swirl to coat. Place fillets, seasoned side down, in skillet. Cook until very brown on bottom, one minute.

Return fillets, browned side up, to baking sheet. Place in oven; bake until just opaque in center, about 8 minutes.
