Cheese Strata

5 slices bread, crust removed

½ teaspoon salt

1 teaspoon dry mustard

8 ounces sharp cheddar, grated

¼ teaspoon cayenne pepper

4 eggs, lightly beaten

bullet

2 cups milk

Tear bread into small pieces and put into well-buttered casserole dish. Beat eggs, lightly, then add milk, cheese and all spices. Stir together well and pour over bread. Cover and refrigerate 12-24 hours.

Bake uncovered at 350 for 1 hour, or until strata is puffed and golden brown.

NOTE: This recipe is from the Eustis Service League Cookbook and is half the given recipe. The full recipe calls for a 9 x 13 pan, but I just used a casserole dish and it was fine. It is really light and good and an easy dinner. I served it with bacon and a fruit salad for supper. I did buy some Publix sourdough French bread and used it for the strata.
