Cheesy Beef Cornbread

1 TBSP yellow cornmeal

1/2 pound ground beef

1 cup yellow cornmeal

3/4 teaspoon salt

bullet

1/2 teaspoon soda

bullet

1 cup milk

bullet

1 (17 oz) can creamed corn

bullet

2 eggs, well beaten

bullet

1/4 cup vegetable oil

bullet

2 cups sharp cheddar cheese

bullet

1 large onion, finely chopped

bullet

2-4 jalapeno peppers, seeded and chopped

Sprinkle 1 TBSP cornmeal in the bottom of a well greased 10 inch cast iron skillet. Cook over medium heat until cornmeal is lightly browned; then set skillet aside.

Cook ground beef until browned, stirring to crumble; drain well; set aside.

Combine 1 cup cornmeal, salt and soda; mix well. Add milk, corn, eggs, and oil. Mix well. Pour half of batter into prepared skillet; sprinkle with cheese, onion, peppers, and ground beef. Top with remaining batter.

Bake 350 degrees for 50-55 minutes.
