Chicken-Broccoli Casserole

1 (3 pound) fryer

1 bunch fresh broccoli

1 (10 ¾ ounce) can cream of chicken soup, undiluted

½ cup mayonnaise

bullet

½ teaspoon lemon juice

bullet

1 cup grated sharp cheddar cheese

Cook chicken in boiling salted water until done, about half an hour. Cool, then debone and chop meat.

Steam broccoli flowerets about five minutes.

Combine soup, mayo, and lemon juice and stir well. Set aside.

Place the broccoli in the bottom of an 8 x 8 casserole. Top with chicken. Cover with soup mixture and top with cheese.

Bake 350 for half an hour.

NOTE: I have had this recipe for years and it is from a Southern Living, probably from back in the 70s. It was one of my children’s favorite dinners and SO easy to fix! Just add a salad of some sort and you are finished!
