Chicken Cacciatore

2 chicken breasts

2 tablespoons olive oil

1/2 large red pepper, diced

2 garlic cloves, chopped

1/2 teaspoon fennel seeds

1/2 teaspoon dried oregano

bullet

1/2 teaspoon dried crushed red pepper

bullet

1 14 oz can diced tomatoes in juice

bullet

2 tablespoons tomato paste

bullet

2 tablespoons dry red wine

bullet

1/2 tablespoon balsamic vinegar

bullet

4 oz cooked pasta

Sprinkle breasts with season salt and garlic salt. Heat oil over medium heat, add chicken and saute until brown, about 5 minutes. Turn over and saute 3 minutes. Transfer to plate.

Add bell pepper and next four ingredients to skillet; stir 2 minutes. Mix in tomatoes with juices, tomato paste, wine, and vinegar. Return chicken to skillet and spoon some sauce over top. Bring to boil. Cover, reduce heat and simmer about 5 minutes.

Arrange pasta on plate and top with chicken and sauce.

NOTE: This fed the two of us easily and I could have done two more breasts. As it is I'll use the extra sauce for pasta.

I used linguini, altho the recipe called for spaghetti.
