Chicken Salad Polynesian
| 2 cups cooked chicken, chopped |
| 1 1/2 cups celery, diced |
| 1/4 cups carrots, shredded |
| 1/2 cup almonds, toasted |
| 1/2 cup mayonnaise |
| 1/4 cup sour cream |
| 1 teaspoon lemon juice |
| 1 teaspoon curry powder |
| 1/2 teaspoon salt |
| 1 1/2 cups canned pineapple, diced |
Combine chicken, celery, carrots, and almonds. (I add pineapple here, too!)
Blend mayonnaise and sour cream and seasonings. Pour over chicken mixture and toss lightly.
Chill thoroughly. Just before serving, add pineapple.
