Chicken Salad with Wild Rice, Cranberries, and Hazelnuts

1/3 cup mayonnaise

2 tablespoons frozen limeade concentrate, thawed

3 ½ cups cubed cooked chicken (1 lb.)

½ cup hazelnuts, toasted and coarsely chopped

1 large celery rib, cut into ¼" dice

½ cup dried cranberries

bullet

½ teaspoon salt

bullet

¼ teaspoon black pepper

2/3 cup wild rice (4 ounces)

2 ½ cups water

 

Whisk together mayonnaise and concentrate in large bowl. Add chicken, nuts, cranberries, celery, salt, and pepper. Mix well and chill, covered, at least one hour.

Rinse rice in fine sieve under cold water, than drain. Bring 2 ½ cups water to boil in a 2 qt. Saucepan and stir in rice. Simmer, covered, until rice is tender, about half an hour. Drain rice and cool, then stir into chicken salad and serve over greens.

NOTE: Found this recipe in August 2001 Gourmet. It called for frozen orange juice concentrate, but I didn’t have any and used the limeade instead. I used a whole box of Uncle Bens Wild Rice, as it was only a little bit more than 2/3 cup. I also used light Miracle Whip and dried craisens. I grilled three chicken breasts and diced them to use in the salad.
