Chicken Saltimbocca

bullet2 large chicken breast halves
bullet2 pieces of ham
bullet2 pieces of mozzarella cheese
bullet2 leaves fresh sage per breast
bullet1 small tomato chopped
bullet¼ cup seasoned breadcrumbs
bullet1-tablespoon Parmesan cheese
bullet1-tablespoon parsley
bullet3 tablespoons melted butter

Flatten chicken breast between sheets of waxed paper.  Place a ham slice and a cheese slice on each breast. Top with torn up sage leaves and half the chopped tomato. Tuck in sides and roll up breast.

Dip into butter and then roll the in a mixture made of the breadcrumbs, cheese, and parsley.

Place in a shallow foil lined (for easy clean up) pan. Bake 350 for 40 minutes.

NOTE:  This is in our Eustis Service League cookbook, which we published back in 1980. I adjusted the recipe for just the two of us. I served it with fried rice and a spinach casserole for lunch one Sunday.
