Chicken Sandwich with Salsa

2 chicken breasts

1 garlic clove, minced

bullet

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1/8 teaspoon cayenne pepper

2 teaspoons lime juice

bullet

Fresh salsa, drained

Stir together garlic and next four ingredients. Rub mixture on chicken. Place in a shallow dish, cover, and chill for at least 3 hours.

Grill or broil chicken breasts until done, about six minutes per side.

Toast bread. Place lettuce on bread and top with chicken breast and 1/4 cup drained salsa per breast. Top with remaining piece of toast.

NOTE: I did not make the salsa but purchased some, hence I am not including the recipe for the salsa. I also marinated my chicken breasts over night. I used spinach instead of lettuce and put spicy mustard on the bottom piece of toast. I also grilled the chicken rather than broiled it. It was very spicy and very good!!! Found it in March 2000 Southern Living.
