Chicken Breasts with Blueberry Sauce

bullet2 boneless, skinless breasts
bulletFreshly ground black pepper
bullet1 tablespoon olive oil
bullet¼ pound sliced fresh mushrooms
bullet1 tablespoon finely chopped shallots
bullet2 tablespoons Marsala or dry sherry
bullet1 cup low-sodium chicken broth, divided
bullet1 tablespoon tomato paste
bullet2 teaspoons cornstarch
bullet½ cup blueberries
bulletWhite, brown, or yellow rice

Pound breasts flat and season with fresh pepper; set aside. Put together mushrooms and shallot and set aside.

Heat olive oil in 10" skillet. When rippling, add breasts and sauté 2 minutes per side. Remove to cutting board.


Add mushrooms and shallot to pan. Stir in wine, ¼ cup chicken broth, and 1 tablespoon of tomato paste. Reduce to low and cook about two minutes. While this is simmering, slice breasts into strips and then in half.

Stir cornstarch into remaining ¾ cup chicken broth and add to mushroom mixture. Return chicken to pan and simmer until heated through and sauce is thickened and bubbly. Remove from the heat, stir in blueberries, and serve over rice.

NOTE: This was in the News Press in Ft. Myers in July 2004. It said to use four breasts but I only used two. All else is as given. I did choose to use dry sherry rather than Marsala, because I had sherry. I also served it over Zataraines yellow rice, as that is our preference. When I use only a small amount of tomato paste, I cover a small plate in saran wrap and drop the remaining paste in increments of one tablespoon all around the plate. I cover it, freeze it, then when it is frozen, I put it in a zip lok bag and keep it in the freezer. Then when I need only a small amount for other recipes, I don’t have to buy a whole can. The paper said if blueberries aren’t in season just to use frozen ones. Only difference is that they’d be a bit "softer" but the tartness of the berry would be present. This had a really good flavor and smelled great cooking! And it is something that doesn’t take a lot of time to fix!
