Chipotle Beef Chili with Lime Crema

1 ½ pounds ground beef

1-2 TBSP olive oil

1 ½ cups chopped onions

3 garlic cloves, finely chopped

¼ cup chili powder

bullet

1 (14.5 oz) can beef broth

bullet

½ cup canned crushed tomatoes with added puree

bullet

¼ cup dark beer or stout

bullet

1 TBSP minced canned chipotle chilies in adobo sauce

bullet

1 TBSP yellow cornmeal

bullet

1 (15 oz) can black beans, drained and rinsed

bullet

1 (7 oz) can yellow corn, drained

bullet

¾ cup sour cream

bullet

1 TBSP fresh lime juice

bullet

½ TBSP grated lime peel

bullet

Tortilla chips

Heat heavy 4 ½ qt. pot over medium high heat. Add beef; sauté until cooked thru, breaking up meat; then drain. Add olive oil to pot and sauté onions and garlic for about 5 minutes. Add chili powder and sauté until fragrant, about 3 minutes. Add beef, broth, tomatoes, stout and chilies. Cover partially; simmer until chili is thick, stirring often, about 1 hour 10 minutes.

Gradually stir cornmeal into chili. Stir in beans and corn. Simmer until heated through. Season it generously with salt and pepper.

Whisk sour cream, lime juice, and lime peel in a small bowl. . Season with salt.

Spoon the chili into bowls. Spoon lime crema on top chili. Serve with chips.

NOTE: My daughter found this on Epicurious.com and we had it over the holidays. This is half the given recipe, as I only need to feed two of us and not 6-8! My daughter said to be sure and use a dark beer, as it made the flavor richer. I ended up going to a 7-11 and buying a single bottle of Amber Bock. She uses Guinnes, but they only sell that by the four-pack. It is a very thick and very rich chili and absolutely spicy and wonderful!!!!!!
