Chocolate Marble Gooey Butter Cake

Crust:

bullet1 package plain yellow cake mix
bullet1 stick butter, melted
bullet1 large egg

Filling:

bullet8 ounce package cream cheese at room temperature
bullet2 large eggs
bullet1 teaspoon vanilla extract
bullet1 stick butter, melted
bullet3 ¾ cups sifted confectioners’ sugar, sifted
bullet1 (6 ounce) package semisweet chocolate chips, melted

Place the cake mix, melted butter, and egg in a large mixing bowl. Blend with electric mixer on low speed for two minutes. The batter should come together in a ball. With your fingertips, pat the mixture into an ungreased 13 x 9 pan and smooth the top.

Place the cream cheese in the same mixing bowl (do not clean) and beat on low speed until fluffy, around 30 seconds. Stop the machine and add the eggs, vanilla and melted butter, and beat on medium speed for one minute. Stop the machine and add the confectioners’ sugar. Beat on medium until sugar is well incorporated, one minute more. Scrape down sides and stir to make sure all lumps are gone. If not, beat another minute until it is smooth.

Place the chocolate chips in a mixing bowl and melt in microwave, about 2 minutes. Take one cup of cream cheese mixture and stir into chocolate, stirring until the mixture is well combined and all one color.

Pour remaining filling over the crust layer and spread out evenly. Drop spoonfuls of the chocolate batter of the top of the filling, then swirl them with a knife, being careful not to cut into the crust layer.

Bake at 350 (preheated) for 40-47 minutes, until it is browned and the center still jiggles when you shake the pan. Cool for 30 minutes, then cut into squares and serve.

Store this cake, covered in aluminum foil, at room temperature for up to four days or in the refrigerator up to one week. Can also wrap in foil and freeze up to six months.
