Coca-Cola Chocolate Fudge Sheet Cake

bullet1 cup Coca-Cola
bullet˝ cup oil
bullet1 stick butter
bullet3 Tablespoons cocoa
bullet2 cups sugar
bullet2 cups flour
bullet˝ teaspoon salt
bullet2 eggs
bullet˝ cup buttermilk
bullet1 teaspoon baking soda
bullet1 teaspoon vanilla

Icing:

bullet1 stick butter
bullet3 Tablespoons cocoa
bullet6 Tablespoons cream or milk
bullet1 teaspoon vanilla
bullet˝-1 cup chopped pecans
bullet1 pound confectioners’ sugar

In a mixing bowl, mix the sugar, flour, and salt.

In a saucepan, bring the Coca-Cola, oil, butter, and cocoa to a boil. Pour the boiling liquid in the mixing bowl and beat well. Add the eggs, buttermilk, soda, and vanilla and beat well. Pour into a greased sheet cake pan and bake at 350 for 20-25 minutes.

In a saucepan, combine the butter, cocoa, and milk and heat until the butter melts. Beat in the remaining ingredients. Spread on the hot cake. Cool and cut.

NOTE: I got this recipe from a friend in Ft. Myers. She calls it "Mary Jane’s Chocolate Fudge Sheet Cake." I did spray Pam on my jelly roll pan and did not flour it (as called for in the instructions.) I did not sift the flour, as it did not say to; and I did use Crisco Vegetable Oil for the oil. I also used Hershey’s cocoa. In the icing, I had some cream in my refrigerator, so I used that and I used 2/3 cup of chopped pecans. The frosting was easy to spread on the hot cake. I cut it into 24 nice sized squares and had four smaller ones left from that. It is really moist and good!
