Coconut Banana Cream Pie

2 cups milk

3 eggs, separated

1 3.5 oz can Bakers Angel Flake coconut, divided

bullet

1 1/14 teaspoon vanilla extract, divided

bullet

2 bananas, sliced

9" baked pastry shell

1/4 teaspoon cream of tartar

1/8 teaspoon salt

bullet

1/3 cup sugar

 

Combine first 3 ingredients in a large glass bowl. Whisk milk and egg together until blended and then whisk them into the dry mixture. Put into the microwave and stir every 2 minutes until mixture is thickened. Take out and stir in 1 teaspoon vanilla and most of the coconut, reserving enough to sprinkle on the top.

Arrange banana slices in bottom of baked pastry and pour custard over them.

Beat egg whites, cream of tartar, and 1/8 teaspoon salt at high speed with an electric mixture until foamy. Add 1/3 cup sugar, one tablespoon at a time, beating until stiff peaks form and sugar dissolves. Stir in remaining 1/4 teaspoon vanilla. Spread meringue over custard, sealing to edge of pastry and sprinkle with coconut.

Bake 325 for 15-20 minutes or until golden brown.
