Crab Burgers with Roasted Red Pepper Sauce

2 (6 1/2 ounce) cans claw crab meat

1 cup, packed down, soft bread crumbs(or more)

bullet

1/2 small onion, chopped

bullet

1/3 green pepper, chopped

bullet

1/3 cup light mayonnaise

bullet

1 large egg

bullet

1/4 teaspoon salt

bullet

1/4 teaspoon pepper

bullet

2 English muffins, split and toasted

Lettuce and sliced tomatoes

 

Drain and flake crabmeat. Stir together crab, bread, onion, green pepper, mayo, egg, salt, and pepper. Shape into 4 large patties. Refrigerate one hour.

Cook patties in 2 tablespoons of butter 6 minutes per side, turning very carefully!

Toast English muffin, spread with mayo and top with lettuce and tomato. Put crab cake on top of tomato and spoon pepper sauce over it. Eat open faced.

 

Roasted Red Pepper Sauce:

1 (7 ounce) jar roasted sweet red peppers, drained

3 tablespoons light mayonnaise

2 garlic cloves, minced

bullet

1/8 teaspoon (dash) of dried crushed red pepper

Process first three ingredients in a food processor until smooth. Stir in crushed pepper. Serve over crab burgers.

NOTE: Found this in an old Southern Living and it was delicious!!! I have trouble getting crab cakes to stick completely together for some reason. Next time I might add more bread. They are supposed to be served open faced and they would be too messy to eat as a burger. Michael thought the red pepper sauce would also be good on hamburgers. Also, I was unable to find a 7 ounce jar of red peppers, so I bought a 12 ounce one and measured out a little less than one cup of the drained peppers. And I use light Miracle Whip rather than mayonnaise for no reason other than my mother did! J
