Crab/Saga Quiche

 

bullet1 cup grated Gruyere cheese
bullet1 cup fresh lump crabmeat, drained
bullet1 cup crumbled saga blue cheese
bullet1 ½ cups whipping cream
bullet3 large eggs, beaten
bullet¼ teaspoon EACH salt, pepper, and ground nutmeg
bulletPastry for quiche dish (I use the Pillsbury in the red box in the dairy case at Publix)

Put pastry into quiche dish; prick well and bake at 425 for 10 minutes. Remove from oven and lower temperature to 350.

Sprinkle Gruyere over prepared pastry. Top with crabmeat and blue cheese.

Combine whipping cream, eggs, and spices and stir well. Pour over crabmeat mixture.

Bake at 350 for 40 minutes or until knife inserted in the center comes out clean. Let stand 10 minutes before serving.

 

NOTE: Got this recipe from a friend in New York City who grew up in Mt. Dora and whom I’ve known since the late 60s. She is a fabulous cook and I wish I had more of her recipes!
